Vegan & Gluten-free Raspberry Clafoutis
Makes 4 servings
coconut oil to grease ramekins
¾ cup almond meal
4 tablespoons Follow Your Heart VeganEgg
1/8 teaspoon salt
1 cup coconut cream
1/3 cup maple syrup
2 teaspoon vanilla extract
2 cups organic raspberries
Preheat oven to 350 degrees F.
Grease 4 (6-ounce) ramekins with coconut oil, and place on a baking sheet.
In a medium mixing bowl, whisk almond meal, VeganEgg, and salt.
Add coconut cream, maple syrup, and vanilla to dry ingredients. Mix until thoroughly combined.
Pour an equal amount of batter into greased ramekins and scatter raspberries into each container.
Bake for 40 minutes until the middle is set. Serve immediately.
