Green Goddess Bowl

Eat like a goddess!

Makes 2 servings


For the dressing:

½ avocado

¼ cup chopped fennel

½ cup chopped red bell pepper

2 green onions, sliced, green and white parts divided

1 bunch parsley

½ small bunch dill

½ small bunch mint

¼ cup lemon juice

¼ cup seasoned rice vinegar

1 cup olive oil

1 tsp agave

¼ tsp salt

¼ tsp pepper

For the bowls:

1 cup cooked red quinoa

½ cup cherry tomatoes, sliced

1 cup cooked chickpeas

1 cup baby spinach

1 bunch kale, ribs and stems removed, leaves thinly sliced crosswise

1 zucchini, sliced in ribbons

1 cucumber, sliced


  1. In food processor, combine avocado, fennel, bell pepper, white parts of green onion, and herbs and blend until smooth. With processor on, add lemon juice, vinegar, oil, agave, salt, and pepper. Set aside.

  2. Divide quinoa in two bowls. Arrange remaining ingredients between the two bowls, and top with dressing. Garnish with reserved green onion.
