Orange, Mint & Watermelon Salad
Makes 6-8 servings
4 oranges, peeled, pith removed
1 small seedless watermelon, rind removed
2 tablespoons orange blossom water
coarse sea salt
3 tablespoons slivered almonds, toasted
fresh mint leaves for garnish
Cut peeled oranges into thin round slices and remove seeds. Arrange the sliced oranges on a platter. Collect the running juice from the oranges and place in a small bowl, along with orange blossom water.
Remove the rind from the watermelon and cut it into ¼” slices and arrange on top of the oranges on the platter. Collect the running juice from the watermelon and add to bowl of orange juice.
Sprinkle orange juice mixture onto the salad and let marinate in the refrigerator for at least an hour.
When ready to serve, sprinkle fruit with coarse sea salt, toasted slivered almonds and mint leaves over the top.
